For the Crust:
- 9 full graham crackers, crushed

- 1 cup confectioners’ sugar
- 1 (8-ounce) container frozen whipped topping (Cool Whip), thawed
For the Blueberry Topping:
- 2 (21-ounce) cans blueberry pie filling
- 1 (8-ounce) container frozen whipped topping (Cool Whip), thawed
Instructions
Step 1: Prepare the Crust
- Crush the graham crackers into fine crumbs using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin.
- In a mixing bowl, combine the crushed graham crackers, chopped pecans, and sugar.
- Stir in the melted butter until the mixture is evenly coated and resembles wet sand.
- Press the mixture firmly into the bottom of a 9×13-inch dish.
- Refrigerate for 15 minutes while preparing the next layer.
Step 2: Make the Cream Cheese Layer
- In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
- Add the milk (or half-and-half) and confectioners’ sugar, and continue to beat until fully incorporated.
- Fold in one container of thawed whipped topping and mix gently until smooth.
- Spread the mixture evenly over the chilled graham cracker crust.
Step 3: Add the Blueberry Topping
- Spread the blueberry pie filling evenly over the cream cheese layer.
- Top with the remaining container of thawed whipped topping, spreading it smoothly over the blueberry layer.
Step 4: Chill & Serve
- Cover the dish and refrigerate for at least 4 hours (overnight is best for the best texture and flavor).
- Slice into squares and serve chilled.
Notes
- For a homemade blueberry topping, simmer 2 cups of fresh blueberries with ¼ cup sugar and 1 tablespoon lemon juice for 5-7 minutes until thickened.
- Add a crunchy twist by sprinkling chopped pecans or crushed graham crackers on top before serving.
- Want to make it lighter? Use reduced-fat cream cheese and light whipped topping for a healthier version.
- For extra freshness, garnish with fresh blueberries or a drizzle of honey.
- If freezing, do not add the final whipped topping layer until after thawing.
